The best I can offer is from my greylist database which covers from 30
May to current.

There are 3599 entries which were blocked and have not retried to send,
and there are 247 entries which have been approved to send during the
past 3 days. Of this latter there are still probably about 20+ per day
which are spam, some of which are trapped by spamassassin and some which
get thru.

Obviously the spam that has got thru has come via genuine mail servers
where there has been a retry, probably mostly open relay servers.

I guess the ones who have not retried are either from direct spam
mailers which don't bother retrying, or via zombies.

So, in my case, you could say that over 93.5% of the email that hits my
mail server in any given week is probably spam.
