We did this in high school back in the 60s and 70s in my little midwest US town. It was called 'distributed education'. I don't know what it means either. But essentially, groups of students ran a small business. I don't remember much about it except that I didn't enjoy it and we packaged, priced and sold what was essentially rolls of cling film when that was not a normal part of life.

I guess there are no new ideas under the sun, just rehashing old ones that have been forgotten. This celebration of 'start-ups' is one of those.
