Partly correct.  They create a 2D manifold of the visible 2D surface  
in 3D.

Yeah but that whole space was 3D and they were selecting viewpoints  
and viewing directions in the 3D space.  Right at the beginning of  
the photosynth demo he flies around the 3D model.
