I see you've sorted the apples and oranges. Thanks for the comparison.

The situation I was referring to was using a much cheaper provider
than AT&T with an "unbricked" iPhone.

Which raises the question here: how soon before unbricking will become
prevalent in Aus? I know nothing about this, but I would imagine it
involves removing specialised connection protocol software and replacing
it with a generic 3G connect.
