OS4.0 is heavily rumoured to permit multi-tasking (OS3.x can, but only through jailbreaking) and since the iPad will offer rewritten office automation apps (iWork) designed for multi-touch, I see your needs met in the near future. OS4.0 is under development, and is most likely to appear in June.

As for the premise that the iPad is not the computer that we want it to be, I'd wager that this device is moving into a space which hasn't been successfully exploited to date: a computer that can be operated without technical assistance, for the masses who know very little about DLLs, drivers, software updates and the like.

Current computing OS's are too complex for the average person: and it's not just Windows and Linux: Mac OS X is also too complicated for people who just want to access information or create some content and share it.
