That's the nature of Apple: If Steve Jobs says 'no', it's a big 'no'.

It's possible to submit handwriting recognition software into the AppStore, so there's no impediment there. There are apps which recognise your signature (or at least recognise your finger tracing a facsimile of your finger) to allow credit card authorisations.
